Pork Shank/Hock

Bay Leave

Olive Oil

Instructions

  1. In a large pot add your water, carrots, onion, celery, bayleaf and pork shank/hock.
  2. Bring all ingredient to the boil until your shank/hock is soft.
  3. Take out shank/hock and pat dry .
  4. Score the skin of shank/hock and rub salt and olive oil generously all over.
  5. Place the shank/hock under a hot grill and let the skin crisp up to form crackling.
  6. Remove once skin is crispy and golden brown.
